Kim’s Cooking Corner by Kim Russo

This month I decided to write a recipe for Chicken and Dumplings!

Ingredients needed:

  • 1 carton (32 oz) Progresso chicken broth
  • 3 cups of shredded cooked chicken
  • 1 can of condensed cream of chicken soup
  • 1 can refrigerated Pillsbury Grands
    Southern homestyle buttermilk biscuits
  • 2 Medium carrots, chopped
  • Celery, chopped

Directions

  • Heat broth and chicken soup until boiling. Once it boils, reduce the heat, and cover it. Let it simmer for about 5 minutes, stirring occasionally. After 5 minutes, turn the heat up again to medium-high and let boil.
  • Roll the biscuits into 1/8 inch thickness and cut into ½ inch wide strips
  • Drop the strips into the boiling mixture one at a time. Add carrots and celery. Reduce heat again and let simmer for 15-20 minutes. Stir occasionally so dumplings do not stick!
